Simple Roast Squirrel --Dec. '09 recipe

Simple Roast Squirrel:--

-1 squirrel per person skinned and cleaned;
-Favorite Seasonings;
-Sliced Medium Onions, one per squirrel;
-1/2 cup of water or chicken broth (Optional).

Gravy:--

-1 cup of water or chicken broth;
-Favorite Seasonings;
-1 tablespoon of flour.

Place the sliced onions evenly on the bottom of a heavily greased roasting pan. Season squirrels inside and out with favorite seasonings. Place squirrels on top of the onion bed. Put water/broth into pan (optional). Cover with pan top and bake in a hot (400 degrees) oven for thirty minutes or until done. Remove the cover and set the onions aside. Brown the meat on both sides in the open pan. Place the onions on the serving plate as a bed and place the squirrels on the onions and serve.

For gravy:--

Add one-half cup of water or chicken broth to the pan. Scrape the bottom of the pan to free the baked bits of onions and
squirrel, Bring to a boil over a medium fire. Add one tablespoon of flour mixed with one half cup of water/broth into a slurry, Season to taste, Cook the gravy for three minutes, Serve in a separate bowl or pour over the Meat and onions.

Note:-- Chicken or turkey strips may be substituted for squirrel as desired.
